No, Back in Stock does not modify products in the store catalogue. 

Back in Stock monitors the variant inventory to know when to display the storefront widget, and when to send an email. Back in Stock does not modify the store catalog. In fact, when you install Back in Stock, the requested permission for store products is 'read only' - we don't request or require access to modify product variants.
